You are completely correct that the current Mac installer and installation are crap.
The good news is that the BOINC team is (finally!) getting the help of some experienced Mac developers who are fixing this. I hope it won't take more than a few weeks before a real installer (and also a GUI interface that lets you watch the graphics) are generally available.
