The file you download from the BOINC site is just a raw executable. It has to be put into it's own folder (such as Library/BOINC) and run from the Terminal.app.

One thing you could do is try a test version of an installer script for Mac, available at http://pirates.vassar.edu/download.php
This makes installing on Mac much easier, but is not without its own problem.
Be sure to put the Einstein@Home URL and key in when you fill in the blanks,
and since the Edit menu does not work you'll need to use Cmd-v to paste in values.

The App is ready to display the graphics, however there is still some work left on the boinc client side to make it visible. If you're curious and not afraid of a command line, try the method described in this thread.
